Stuffed Pork Chops Recipe

This is a really delicious recipe that is not too difficult to make. I experimented with some ingredients that are out of my normal range and was very pleased with the results. My son Thomas even liked this dish! The most important part of the recipe is that you go to the butcher and get really nice, thick cut pork chops. I go to R & S Meats on Wall St. in Huntington and they even cut the pocket in for the stuffing.

What you will need:

  • 4 thick pork chops (with pockets cut in)
  • 2 slices of Whole Wheat - Whole Grain Bread from Reinwald's Bakery (cut in 1/2" cubes)
  • 1 small onion (chopped)
  • 1 celery stalk (Diced)
  • 2 dried figs (Diced)
  • 2 dried apricots (Diced)
  • 1/4 cup pecans (crushed)
  • 1 egg
  • 1/2 tsp Marjoram
  • 1 tsp Thyme
  • Salt & Pepper
  • Olive Oil

Preparation:

  1. Preheat Oven to 360 degrees
  2. Saute onions and celery in olive oil
  3. In a bowl mix bread, onions, celery, figs, apricots, pecans, egg, sat & pepper, marjoram, & Thyme to make the stuffing
  4. Stuff your chops to capacity
  5. In a skillet sear pork in olive oil on both sides. Be careful flipping so you don't lose too much stuffing. Remember that the methods used yield the best taste, the carmelization on the outside will really add an element to the dish!
  6. Transfer chops to a baking dish and bake for about 35 minutes
